Cranberries, also known as Mossberries have a high nutrition value and are good antioxidants to add to the meal. Their tart taste is great for making Achaar. Since fresh cranberries are only available for a short time, make an extra batch and refrigerate it for later!ingredients:
12 oz. fresh cranberries, rinsed and dried on paper towel
3-4 large jalapeno peppers
1/4 cup my recipe Achaar Spice Mix
1/4 cup extra virgin olive oil or mustard oil
2 inch cube ginger
1 tbsp. salt

preparation:
- Coarsely chop cranberries in a food processor, barely cutting them in half.
- Chop jalapenos and ginger as well. (Chopping each item separately lets you control the size).
- Pour oil in a large microwave safe bowl, heat for 1-2 minutes on high.
- Add cranberries, peppers, ginger and all the other ingredients.
- Mix well and store in a glass jar.
- Cranberry Achaar is ready to eat but tastes better after a couple days as the flavor ripens.
- You can store it in the refrigerator after 2-3 days.
