"Ambrosia Dessert Pasta Salad"



A delicious creamy, fruity pasta salad.  It’s a favorite at family get togethers.  The pasta looks similar to tapioca after it’s cooked.  If you make this salad and take it to a party, be prepared to be asked for the recipe:) I got this recipe from my sister in law at Thanksgiving party. I couldn't get enough of this salad, it's that good. I added peaches to it, and it taste even more delicious .

        Ingredients:
1 1/3 cups uncooked acini di pepe pasta (I bought it at Winco) 
8 oz Cool Whip, leave it at room temperature to thaw for 30 min.
1/2 of (20 ounce) can pineapple tidbits, drained 
1 3/4 cups milk
1/3 can sweet condensed milk
1 (3 1/2 ounce) package instant vanilla pudding 
1 (20 ounce) can crushed pineapple, drained
1 can peaches ,drained (cut in pieces)
3 (12 ounce) cans mandarin orange sections, drained
2-3 cups mini marshmallows
1 1/2 cup sliced grapes (optional)
1/2 cup flaked coconut (optional, I didn't add it)
Optional: washed fresh mint leaves w/stalks to decorate top


I made a few changes: added more mandarins and peaches.
Add 1 tsp salt to the water and 3/4 cup of sugar. Boil pasta for 11 min. Drain well, rinsing with cold water to cool pasta.
Whisk milk with pudding  for 2 minutes.
Add cool whip.  Mix.
Add sweet condensed milk. 
Add marshmallows and mix together.  
Combine all drained fruits in a large bowl, add pasta.
Mix together with pudding cream.
I added grapes to half of the salad, because my daughter does not like em. Refrigerate overnight or  at least for  5 hours.
