Black-eyed Peas, known as Lobiya in Hindi are quite versatile and easy to cook. They are used in many recipes including this easy to make appetizer or snack. I lived in Birmingham, Alabama for many years with my husband and children where Black-eyed Peas are an important part of a traditional New Year's dinner. It is believed that Black-eyed Peas bring good luck and prosperity.
Here is my recipe for Lobiya Pakoris to bring you good luck!

About 40 Pakoris
ingredients:
1 cup black-eyed peas, soaked 2-3 hours or overnight (see note)
1/2 inch cube ginger
1 tsp. coriander seeds, coarsely ground
3/4 tsp. salt
1/2 tsp. red pepper flakes
1/3 cup finely chopped green onions (about 3)
2/3 tbsps. finely chopped coriander leaves
1/4 tsp. cracked black pepper (optional)
less than 1/4 tsp. baking soda
2-3 cups oil for frying
note:
To speed up the soaking, use hot (not boiling) water, black-eyed peas will soak in 60-90 minutes.

To speed up the soaking, use hot (not boiling) water, black-eyed peas will soak in 60-90 minutes.
preparation:
- Drain Black-eyed Peas in a colander, place in a food processor.
- Add ginger to the Peas and grind into a light, smooth paste, adding 1-2 tablespoons of water if needed.
- Transfer pea-ginger paste to a bowl.
- Heat oil in a frying pan on medium heat.
- When oil is almost heated, add coriander seeds, salt, pepper, green onions, coriander leaves, (black pepper) and baking soda to the batter. Mix well.
- Test to see if oil is heated by dropping a small amount of batter in oil. Batter should sizzle but not darken right away.
- Drop tablespoon size batter in hot oil, rounding slightly with fingers.
- Fry until golden brown (3-4 minutes), turning once. Drain on paper towels.
- Serve hot with Coriander Tomato Chutney!
