Valentine's Day Cupcakes


This year, surprise your Valentine with a delicious homemade treat. Here I have a great cupcake recipes to help spread the love this Valentine's Day.



     Ingredients:

4 eggs
1 2/3 cups sugar
1 cup vegetable oil
15-ounce can applesauce
2 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt



   Ingredients for cream: 
1 cups heavy whipping cream 
1/2 cup milk 
1/2 pkg. (3 oz) JELLO-O Vanilla Flavored Instant Pudding 
4 oz mascarpone cheese 
1 tsp vanilla extract 
2 Tbsp. Napoleon brandy or your favorite rum liqueur 
1 Tbsp. powdered sugar 
Food coloring, optional

    Direction for cream: 
Combine mascarpone cheese with vanilla, powdered sugar and of brandy in a bowl and beat with electric mixer until combined and creamy for about 1 minute. Gradually add in heavy cream. Whip for a few min until cream becomes thicker. Then add milk and dry pudding mix, beat until it becomes stiff consistency. 


Preheat the oven to 325˚F. 
In the bowl of a mixer fitted with the paddle attachment, combine the eggs and  oil. 
Add apple sauce and salt. 
Add sugar and mix. 
 In a separate large bowl, combine the flour, baking powder, cinnamon and baking soda.  Whisk until thoroughly incorporated. 
Without over-mixing, gradually stir in the dry ingredients into the wet ingredients until just combined. 
Pour into the prepared cupcake liners. To make a heart shaped cupcake put a marble or beans between the liner and pan. 
Bake on 325 F for 20 to 30 minutes or until it passes the toothpick test.(Note: All ovens are different, always check before time expires when you are baking)   Let cool completely on a wire rack before frosting. Makes 24 regular size cupcakes.  
 Make cream add food coloring. 
Use a star tip to make hearts. I made a small heart first then another around it.
