As the summer almost here fresh summertime tomatoes will be fantastic with this marinade! It makes tomatoes taste so delicious. I tried it at the party and had to get this recipe. My friend Nadya shared it with me. I am excited to share it with everybody. These would be so perfect for picnics with BBQ Chicken and Pork Kebabs.
Ingredients:
6 lbs of roma tomatoes
1 tsp ground black pepper
1 bunch parsley
1-2 bunch green onion
1 bunch dill weed
1 head garlic
Marinade:
5 cups of cold water
24 oz ketchup (680g)
2 tbsp salt
2 tbsp sugar
Slice parsley, green onion, dill, and mince the garlic. Mix it all in the bowl.
Next cut the top green part of the tomatoes.
Put the tomatoes in boiling water for approximately 2 minutes
drain the water and peel the skin (it is very easy to do after you put them in hot water) cut the tomatoes in 1/2 lengthwise.
Place gently tomatoes in layers into a glass 2 liter jar and sprinkle a layer of the mixed herbs on each layer of tomato, do that until you are done. Do not press tomatoes in.
Mix 5 cups of cold water with ketchup, salt, sugar and pepper.
Pour over tomatoes.
This recipe makes 2 (2 liter) canning jars. It will be ready in 48 hrs. Keep it in the fridge.
