Quick Hand Pies Filled with Mashed Potato "Pirojki (Piroshki)"

As you probably realized by the name “pirojki” is a Russian recipe and they are a kind of mini pies with buttermilk dough. I got the recipe from my mother in law while back. My family loves them! I am sure these delicious dough pockets will be a HIT with your family too! The filling can be either potato, mushrooms, meat, eggs and green onion. This is a different type of dough, it's with baking soda. My other Pirojki recipe is the soft kind.


Ingredients for dough:  
1 cup buttermilk
3/4 tsp salt
1 tsp baking soda
2 to 2 1/2 cups flour

For filling:
Mashed Potato
1 caramelized onion 
Minced dill
Black pepper
You can add mushrooms in it


Oil for frying.

(makes about 12 pirojki)
Make  Mashed potato ahead. It needs to be at room temp. 
Saute minced onion until golden brown. 
Mix dill, black pepper and onion with mashed potato. 
Add buttermilk in the mixer. 
Add salt and baking soda. 
Add flour and mix well. 
The dough will be soft and easy to work with. Cover it with plastic wrap.
Cut a small piece of dough and make a circle. Add about 1 tbsp of potato filling.
Pinch together the ends and press em down. 

Heat oil before adding the pirojki. First put the pinched side down to fry. 
Fry on med both sides. After frying transfer and cover with paper towels. 









To make a different filling with beef or chicken liver:
Boil liver for 15 min in water with salt. Use a food processor to make a paste. Then add it potatoes, onion and dill. Then make pirojki.
