When I was young, I wasn't a fan of rice noodles at all. On that time I always thought that the smell was so....weird. But when I grew up I found out that the rice noodles is so yummy! I dont know if I get used to that smell or the brand that I had when I was a kid smell bad lol.
By the way, the recipe that I'm gonna show you today is stir fried rice noodles with chicken and roasted chilli paste. I have cooked this recipe a lot of time since I lived in Sweden. It's kind of spicy( that's what I like! ), easy to cook and I always cook it as a lunch box because It reheats quite well. So let's get started.
Ingredients ( 2 portions)
1. 150 g chicken innerfilé
2. 150 g rice noodles ( I use Chantaburi noodles)
3. 30 g onion , sliced
4. 30 g red bell pepper, sliced
5. 30 g broccoli, sliced
6. 30 g carrot, sliced in long pieces
7. 1 egg
8. 1 teaspoon roasted chilli paste
9. 3 tablespoons light soy sauce
Instructions
1. Soak rice noodles in a warm water around 10 minutes.
2. Heat the oil in a wok or a large frying pan and stir fry chicken until it's cooked.
3. Add half teaspoon chilli paste, and 1 1/2 tablespoon light soy sauce. Then stir fry for 1 minute.
4. Add all vegetables and stir fry around 3-5 minutes. Then transfer a wok into a dish. Set aside.
5. In the same pan, add egg and stir it quickly. Drain the noodle and add into the pan . Toss well.
6. Seasoning with half teaspoon of chilli paste and 1 1/2 tablespoons of soy sauce.
6. Return the wok into a pan. Toss well then transfer to a plate for serving.
Ps. I use a roasted chilli paste from Thailand. This tastes super spicy. That's why I add only 1 teaspoon. But if you like a hot food and the roasted chilli paste that you have is not so spicy, you can add a little bit more chilli.
