Salmon is always my favourite food. I really love the texture, the taste and its smell isn't so stinky like other fish ( t.ex. cod .... ewwwww it smells fishy!!!! ) Last week I noticed that salmon was on sale at supermarket. So I bought a lot without any hesitation.
Normally I always cook grilled salmon with soy sauce. But today I'm gonna do something different.... That is "Laxsoppa" or Swedish Salmon Soup. I found this recipe by accident when I searched for Swedish recipe with salmon ( the link is written in Swedish)
I didn't cook follow that recipe exactly. I changed and adjusted some ingredients. But the result turned out so good. So I would like to share this recipe with you. It is very easy to cook and it tastes so yummy.
Ingredients ( for 2 persons)
1. 200 g Salmon
2. 1/2 onion , peeled and chopped
3. 1 carrot , peeled and chopped
4. 2 potatoes, peeled and chopped
5. 1/2 leek, finely sliced
6. 600 mL fish stock
7. 100 mL cooking cream
7. Salt and pepper
8. Dill for garnish
Instructions
1. Bring a fish stock to a boil. Add potatoes, onion and carrot and simmer around 15 minutes or until potatoes and carrot are soft
2. Add salmon and leek. Simmer for around 5 minutes. Stir occasionally.
3. Add cooking cream and simmer just 1 minute.
4. Seasoning with salt and pepper. Topping with dill before serving.
