I get an idea of this recipe when me & my friend visited his mum in Helsinborg in spring this year. She was always nice as usual. That time she served this recipe as our lunch.
The first time when I saw this food I felt like " It looks .... uhmmm different" I had bacon wrapped chicken only with Greek salad. So, I was a little bit sceptical. But when I tried this ...... uhmmm It tasted very yummy .... Better than I expected a lot and I was so impressed with this.
1 week later, I tried to recreate this recipe again and it tasted exactly the same. It's creamy , a little bit salty from bacon, sweet and sour from tomato purée and the aromatic smell from curry is ... uhmmm yum yum. So, I would like to share this recipe for you.
By the way, I always cook this as my boyfriend's lunchbox because it reheats very well.
Ingredients : ( for 2 persons)
1. 150 g chicken inner filé, cut into long pieces
2. 1 pack of bacon ( around 140 g)
3. 300 mL cooking cream
4. 50 g red bell pepper, roughly chopped
5. 30 g onion, finely chopped
6. 2 teaspoon curry powder
7. 1 tablespoon tomato purée
8. 1 teaspoon cayenne pepper powder ( optional)
9. Parsley, for garnish
Instructions
1. Wrap the bacon around the chicken, then fry the chickens on the pan until they are golden brown. Take them up from the pan. Set aside.
2. Add onion into a pan. Fry until its soft, add curry powder, cayenne chilli powder and tomato purée then stir fry for 1 minute.
3. Add cooking cream and bell pepper, then reduce a heat to a simmer for 5 minutes.
4. Transfer chickens into a curry and let it simmer for about 5 minutes.
5. Transfer curry to a plate for serving and garnish with parsley. Served with rice or pasta ( I tried with Risoni, it was also very yummy)
PS. If you don't like a thick consistency, you can add water or use milk instead of cooking cream.
