Hej! Have u ever had problem about cooking lunch box ? Sometimes I have a problem like Oooh it smells fishy or sometimes it is too dry for me. So,These are my requirements on lunch box
1. It should contain a lot of thick sauce.
2. No garlic allowed.
3. No seafood allowed except salmon because it smells fishy when reheats.
4. It shouldn't be a soup because there's no bowl at work.
5. It must not contain any alcoholic ingredients .
6. No crispy food because it feels dry when eating( so no fried wanton as a lunch box).
7. Food should reheat well ( that is very hard because I need to do trial and error!).
As you can see.. Uhmm there are a lot of conditions but this recipe meets all requirements. Even though I cut off garlic and Chinese rice wine from the recipe, it taste still very good. So I would like to share this recipe for you. Let's see how to cook this recipe.
Ingredients ( for 2 persons)
1. 250 g ( almost 9 ounce) chicken inner fillet , cut into 2 cm ( 3/4 inch) cubes
2. 1 1/2 teaspoon light soy
sauce
3. 1 teaspoon brown sugar
4. 1/2 teaspoon white pepper
5. 1 teaspoon sesame oil
6. 1/2 + 1/2 teaspoon black soy sauce
7. 2 big cilantro roots
8. 30 g ( 1 ounce) ginger, sliced
9. 300 mL ( 1 1/4 cup) water
10. 1 tablespoon cooking oil
11. 2 tablespoons oyster sauce
12. 1 tablespoon corn starch
12. 60 g ( 2 ounces) fried Chinese sausage, for serving
12. Green chillies, slides for serving
13. Cucumber, slides for serving
14. Cilantro leaves, for serving
Instructions
1. In a bowl, marinate chicken with 1 minced cilantro root, light soy sauce, brown sugar, 1/2 teaspoon black soy sauce, sesami oil and white pepper. Marinate at least 2 hours.
2. Heat oil in a frying pan, add ginger and whole 1 cilantro root and stir fry until you can smell aromatic scent from them.
3. Add chicken, stir fry until chicken is half-cooked. Then add water and reduce heat to a simmer.
4. Add oyster sauce and 1/2 teaspoon black soy sauce. Simmer it for 10 minutes
5. Mix corn starch with 2 tablespoon cold water. Then add into the pan, stir continuously.
6. Simmer for more 5 minutes, and yes finally it's done!
7. Served with fried Chinese sausage, green chilli and cucumber. Garnish with cilantro leaves on top. Uhmmmmm yum yum.
ps. It should be served with sliced green chillies. I used to try red chillies before and it didn't work.
