When I was young, I always helped my grandma and granddad make Thai desserts. They owned Thai dessert shop in Bangkok and they worked really hard ( they worked from 5 am - 3 pm everyday before opening the shop at 3.30 pm). But the shop was opened only a few hours because everything was sold out. That was very good for them hehe.
By the way, because I always helped them so I know exactly how tough to make those desserts. Time, skill and special tools are needed if you wanna make Thai desserts.
But everything always has an exception. I found out some Thai dessert recipes that I really like and it's easy to make. Today I would like to share one of my favorite Thai desserts which is called Tub Tim Krob. It looks like something red and crunchy in sweet coconut milk. I modified And cut off some ingredients from my granny's recipe because I cannot find them in Sweden. But I guarantee that it tastes still very good. So let's see how to make.
Ingredients ( for 2 portions)
1. 1 apple ( around 150 g) peeled and diced , I recommended Gala or Fuji apple because they are crispy.
2. 100 ml water
3. 100 ml + 3 tablespoons sugar
4. 200 ml coconut milk
5. 1/4 teaspoon salt
6. 1/2 teaspoon red food colouring
7. 100 ml tapioca starch
8. 1 tablespoon arrow root powder ( if you don't have, just skip it)
Instructions
1. Make a syrup by boiling 100 ml water with 100 ml sugar. Then let it cool down.
2. Add red food colouring in the cooled syrup, mix it well and then add diced apple into the red mixture. Let it soak for 1 hr.
3. Mix 2 starches together in a mixing bowl. Drain apple and put it in the starch bowl. Toss well until every pieces are coated with starch. Tap off the excess starch ( I use sieve).
4. In a saucepan, boil the water with the medium high heat. Once it's boiled , add starch coated apples and let it boiled until the starch become translucent ( which is about 2-3 minutes)
5. Drain off the hot water from apple and transfer it to the bowl filled with very cold water.
6. In another saucepan, boil coconut milk with 3 teaspoons sugar and salt. Once it's boiled , remove from the heat and let it cool down.
7. For serving , transfer the apple into a serving cup then pour coconut milk on top. And yes it's done
Ps. You can change the colour of Tub Tim Krob to the colour you like ( I have seen even blue or violet)
Ps.2 you can add corn and jack fruit on top. I prefer not to add them.
I know that it sounds a little bit complicated to make. But believe me, this is one of easiest Thai desserts. This dessert's recipe is not so sweet so it's good for someone who don't like having very sweet dessert like me. And I hope you will like this recipe also.
