Hi everyone, today I would like to show you an easy Thai recipe. It's chicken panang curry fried rice. You might get a bit confusion if it's curry or fried rice. It's actually fried rice but I use panang curry to make the taste a little bit spicy and creamy.

I think the first person who create this recipe is very genius (which is not me lol) . Because Thai people like having curry, they also like having fried rice. So this is a perfect combination. And I just want to let you know that this recipe is not a original panang curry, because I cannot find eggplants and kiffir lime leaves in my town. So I need to use other ingredients instead. If you can find kiffir lime leaves or eggplants, please don't let me know because I'm gonna be so jealous haha. So let's see how to cook this recipe in my own style.

Ingredients ( for 2 persons)
1. 250 g leftover cooked rice
2. 250 g chicken fillet, chopped
3. 40 g panang curry paste
4. 4 tablespoons coconut milk
5. 1 red bell pepper, roughly chopped
6. 2 tablespoons cooking oil
7. 1 1/2 tablespoon fish sauce
8. 20 g goat chilli , chopped
9. 5-6 leaves sweet basil ( Thai basil) for garnish

Instructions
1. In a wok pan or frying pan, heat an oil with a medium heat. Then add panang curry paste and stir fry until you smell the scent from the paste, then add coconut milk.

2. Add chicken and stir fry until the chicken is cooked. Add bell pepper and chilli and continue stir frying for about 3-5 minutes. Add rice and reduce the heat to a low heat.

3. Season with fish sauce ( in the case that you don't like fish sauce smell, use salt instead). Add sweet basil and transfer fried rice into a serving plate.

Ps. The amount of fish sauce that you add in the recipe depends on how salty of the panang curry is. Different brands have a different taste. So I recommend you to taste the fried rice before adding fish sauce.
