My Favorite Lunch : Stir Fried Chicken and Vegetables






Hi , you know that i always focus on cooking lunchbox. You might have a question like which recipe is my favorite or which recipe that I cook most often. So this recipe is the answer. 


The first time that I cooked this recipe is around winter 2012. Actually I really wanted to cook   "Kai Phad King" or stir fried chicken with ginger , spring onion and Jew's ear mushroom. But the problem is I couldn't find Jew's ear mushroom in Sweden at all. So I decided to replace that mushroom with a lot of vegetables and it tasted really good. When I made this as lunch box, it reheats very well.


By the way, This recipe tastes already spicy from ginger , so it's up to you to add chilli in the recipe or not. Let's see how to cook this recipe.

Ingredients ( for 2 persons)

1. 250 g chicken fillet, thinly sliced
2. 30 g ginger, chopped into long pieces around 1 inch ( 2.5 cm) long.
3. 40 g champignon mushroom ( 8 small mushrooms) , sliced
4. 30 g carrot, chopped into long pieces around 1 inch ( 2.5 cm) long.
5. 30 g green bell pepper, chopped into long pieces around 1 inch ( 2.5 cm) long.
6. 30 g yellow bell pepper, chopped into long pieces around 1 inch ( 2.5 cm) long.
7. 5 g chilli, sliced
8. 30 g onion, sliced
9. 2 tablespoons oyster sauce
10. 1 tablespoon light soy sauce
11. 1/2 teaspoon black soy sauce
12. 1 tablespoon cooking oil
13. 1/2 cup (125 mL) water 

Instructions

1. In a wok or frying pan, heat the oil with medium high heat, brown the chicken until the chicken is cooked. Add onion and carrot into the pan then stir fry for a few minutes.

2. Add bell peppers, then stir fry for a few minutes. Add mushroom, ginger and chilli then stir fry until mushroom is cooked .

3. Add water, oyster sauce, light soy sauce and black soy sauce into the pan. Mix them well and let the water mixture boils again. Remove from the heat.

4. Served with rice and now it's a time to eat!
