Roasted Chicken Thighs with Sweet and Spicy Sauce

Hi , lately I have cooked and done a lot of experiment with Thai recipe "peek kai naam daeng" or Thai chicken wings with red sauce because I like that sauce so much. The taste is sweet and sour with a little bit hint of salty and spicy and I can't get enough of that. I create some recipes based on that sauce such as grilled chicken with sweet and sour sauce , chicken stew or even this recipe.

The recipe that I'm gonna show you today is quite spicy because I use roasted chilli paste for this recipe. The roasted chilli paste that I use today is from Thailand and it tastes very spicy. But if you like a spicy food and the roasted chilli paste that you have is not so spicy, you can add a little bit more from the recipe. On the other hand, if you don't want to make it so spicy, just reduce the amount of the roasted chilli paste. So let's see how to cook this recipe.

Ingredients ( for 2 persons)
1. 2 chicken thighs ( around 400 g) you can also use chicken wings or chicken legs. They are very good with this recipe too.
2. 30 g onion, finely chopped
3. 1 teaspoon roasted chilli paste
4. 3 tablespoons ketchup
5. 3 tablespoons water
6. 1 tablespoon cooking oil
7. 1 tablespoon oyster sauce
8. 1 tablespoon brown sugar
9. Salt and white pepper

Instructions
1. Preheat the oven at 200 celcius degree ( 400 F). Rub a little bit of salt and white pepper on chicken then put chicken in the oven for about 1 hour. 

Here is my trick when I roast the chicken : I put the skin side down then roast for 30 minutes. Flip the side (so the skin side up) and roast chicken for 20 minutes. For the last 10 minutes I use "Grill Function" on my oven to make the skin crispy.

2. In a small bowl, mix ketchup, water, roasted chilli paste, oyster sauce and brown sugar together. Set aside.

3. In a frying pan or a wok, heat the oil with a medium heat. Add onion and stir fry until it is soft. Then add the sauce mixture from 2). Simmer the sauce until it's thick ( I recommend you to taste the sauce first so you adjust the taste as you want)

4. Add the chicken into the frying pan, turn off the heat and toss chicken with the sauce well.

5. Served with rice and boiled vegetable like broccoli, carrot or pea.

You can actually deep fry the chicken instead of roasting it. Just make sure that the chicken is cooked ( the inner temperature should be at least 165 F or 74 C ). And of course, please feel free to share your opinion when you cook this. You like it or not, please just let me know.
