The taste of kanelbulle is a little bit different than other cinnamon rolls because it contains cardamom. When you eat it you will feel like ... Uhmmm smell is so yum yum. I adapted this recipe from this site , just increasing the amount of filling inside and I actually tried some of her recipes , all of the recipe I tried tasted really good.
Even though it takes almost 3 hours for me to bake this recipe but mostly it's about waiting time. So I can really say that this recipe is not hard to bake. I don't add anything fancy on the recipe actually. So this is a recipe that Swedish people are accustomed to.
If you have a Swedish guy that you got a crush on but you don't know how to make him falls for you ( even you use a black magic spell or voodoo already!) , bake this one for him because I think almost Swedish people love it! So let's see how to bake kanelbullar.
Ingredients ( for 50 pieces)
Dough
1. 2 cup (500 mL) milk
2. 150 g butter
3. 50 g yeast
4. 100 mL sugar
5. 4 1/2 cup (around 1100 mL) white flour
6. 1/2 teaspoon salt
7. 2 teaspoons ground cardamom
Filling
1. 150 g butter, at room temperature
2. 150 mL sugar
3. 1 1/2 tablespoon ground
cinnamon
Glaze
1. 1 egg
2. 2 tablespoons nib sugar ( pearl sugar)
Other equipments
1. Dough mixer
2. 50 pieces paper molds
3. Electric hand mixer
Instructions
1. In a big mixing bowl, crumb the yeast and set aside.
2. Melt 150 g butter in the saucepan with a low heat. Once it is all melted, add milk and warm the mixture until the temperature reaches 37 celsius ( 98.6 F) then remove from the heat. Using a kitchen thermomether is recommended because the yeast will be died if the temperature is more than 40 celsius (104 F). If the temperature is too low, it's gonna take longer time for yeast to rise the dough.
3. Mix a little bit of mixture in 2) with yeast. Stir it well then add the rest of the mixture. Then add sugar, salt and ground cardamom , mix it well.
4. Transfer the mixture to a dough mixer then start the mixer. Add white flour little by little ( I add around 100 mL / time) while the machine is on. Let the machine knead the dough for 15 minutes. Turn off the machine and let the dough rise in the room temperature for 30 minutes.
4. While waiting the dough, mix all filling ingredients together by using electric hand mixture. Set aside.
5. Tadaa! The dough is ready! Divide the dough into 2 small equal doughs. Roll out the small dough into a rectangular shape with a size 20 x 50 cm ( 8 x 20 inches) . Spread half of the filling mixture onto the dough then roll the dough in a long way.
6. Cut the roll into pieces which is around 1.5 cm ( 0.6 inch) in thickness. You will get 25 pieces. Do the same thing with another dough , so you will get 50 pieces.
7. In a baking sheet , put rolls in paper molds and let the rolls rise for about 30 minutes.
8. Once the dough is rising, beat the egg and spread it on top of the rolls gently and sprinkle nib sugar on top.
9. Bake the rolls in the middle of the oven at 225 celsius ( 450 F) for about 8-10 minutes ( or until it's golden brown on top). Take them out then let them cool down on a rack. Finally they are ready to be served.

Normally, I like to have kanelbulle with a warm milk. That makes me feel like uhmmmm it's heaven!
