Steamed Egg with Minced Pork Tom Yum Sauce

Hi everyone, today I'm gonna show you a spicy food recipe. This recipe is a combination between a soft and smooth Japanese style steamed egg (Chawanmushi) and hot and spicy "Tom Yum" sauce on top. Some Thai people have this with rice but I'd rather have it as appetizer.

I gotta warn you first before we start cooking. This recipe tastes really spicy. If you are not the person who can bear with very spicy food, reduce or exclude chilli and roasted chilli paste from the recipe.

And another thing that I want to tell you is that finally I found kiffir lime leaves! Woohoo! I found them in the very small and narrow corner in the freezer at Asian shop. So I'm not gonna be jealous to anybody who have that at home any more hehe. So let's see how to cook this recipe.

Ingredients ( for 2 small cups)

Tom yum stock
1. 1 cup ( 250 mL) water
2. 2-3 kiffir lime leaves
3. 1 lemon grass root, crushed
4. 15 -20 g galangal root , sliced

Steamed egg
1. 1 egg
2. 1/2 cup tom yum stock
3. 1 teaspoon light soy sauce
4. 20 g champignon mushroom 

Tom yum sauce
1. 1 tablespoon fish sauce
2. 1 tablespoon lime juice
3. 1/2 teaspoon sugar
4. 2 tablespoon evaporated milk
5. 2 tablespoon tom yum stock
6. 1/2 teaspoon roasted chilli paste
7. 3-4 coriander ( cilantro) leaves
8. 1 bird's eye chilli, chopped

Cooked minced pork
1. 50 g minced pork
2. 3 tablespoon tom yum stock


Instructions 
1. Prepare tom yum stock by adding all tom yum stock ingredients in a saucepan then boil the stock on the stove around 10 minutes. Remove the saucepan from a heat and remove all leaves and roots from the stock. 

2. Prepare steamed egg by mixing all steamed egg ingredients in a mixing bowl then strain the mixture through a sieve. Pour the mixture to 2/3 of heat proof cups ( I use ramekins). Cover the top with foil and steam the mixture with a lowest heat for 15 minutes, then add mushroom on top and continue steaming it for about 10 minutes ( covered with foil). Remove steamed egg from the heat 

3. While waiting for steamed egg, we can prepare Tom Yum sauce by mixing all ingredients in a small mixing bowl. Set aside.

4. Prepare cooked minced pork ( or any meat of your choice) by heating a tom yum stock in a sauce pan. Once it is boiled add the meat and stir it until it's cooked. Remove from the heat.

5. Once the steamed egg is ready, add cooked minced pork on top and then pour the sauce on top. Garnish with coriander leaves and yes it's done!

Ps. I recommend you to use small cup when making this recipe. The bigger cup takes more time when you make steamed egg. 

When I tried it, the steamed egg is melted in my mouth! It is so so soft and the sauce tasted really yummy. If you want to try something new and spicy at home, try this. I'm sure that this recipe is not gonna let you down.
