The Best Smooth Fondant Recipe Made with Chocolate

It's been about 2 years since I started to decorate cakes with fondant. I learned a few tricks: that homemade chocolate fondant is the best to cover cakes and to use for molds too. I wanted to share this recipe with everybody :)


       Ingredients:
6 ounces (about 1 cup) Wilton candy melts white chocolate
16 ounces white mini-marshmallows
2 tablespoons water
2 tsp light corn syrup
1 teaspoons amyl acetate essence or clear vanilla 
About 7 cups (almost 2 pounds) powdered sugar
Vegetable shortening for mixing bowls


Use this one for white color. You can use any other color for your fondant. 
Melt chocolate in microwave. 
Use shortening to lather the bowl for melting marshmallows. Melt em in the microwave in 30 sec increments until its all melted. Use shortening to lather the mixer bowl. Then pour marshmallows it into Kitchen aid mixer bowl add melted chocolate and water.  
Add sifted powdered sugar (leave one cup out from the 2 lbs bag), corn syrup and flavor essence. 
I love to use this flavoring for fondant. Its sold in Asian stores. It taste like candy (Dushes candy favor).
Mix with the hook attachment for a few min.
Then take it out and knead it on the table. The best surface to use for fondant is heavy duty clear plastic table cover. I buy mine at Walmart. Put fondant into zip lock bag and store it in the fridge overnight.  
Then when you are ready to cover the cake or do the molds just heat it in the microwave until it soft and easy to roll. You don't even need to use corn starch when you roll it on the plastic table cover.
