Hi everyone, when it's special occasions in Thailand such as New year's day, Thai new year's day ( 13th April) or when we visit someone , it's kind of normal to give away some cookies or Thai desserts to other people. Thai desserts which are suitable for give away should be something dried ( like cookies) because they can be kept for a long time.
The recipe that I'm gonna show you today can be kept up to several months. I have read that it can be kept up to 6 months but personally I never keep them more then 1.5 months because I always eat them up before they are expired hehe. The name of the recipe is "Woon Krob" in Thai language which means crispy jelly in English. It is crispy as its name because of sugar's precipitation at the shell of the jelly. Normally I always make this recipe in a big batch because it takes time. But come on! It is worth trying! So let's see how to make this crispy jelly.
PREP TIME : 0 minute
COOK TIME : 20 minutes
WAIT TIME : 4-8 days
READY IN : around 4-8 days (up to the sun light and humidity)
Ingredients ( for 25 -50 pieces)
1. 2 tablespoons agar-agar powder
2. 1 cup ( 250 mL) water
3. 1 cup ( 200 g) granulated sugar
4. 1 tablespoon arrow root flour ( if you don't have , just skip it)
5. Coloring agent of your choice ( today I use red and green colouring agents)
6. Flavouring agent of your choice ( today I use vanilla extract and peppermint flavouring agent)
Instructions
1. In a saucepan, mix water and agar-agar powder together, then bring about to boil with a medium heat. Stiring continuously until the solution becomes clear.
2. Add sugar into the mixture, stir it until the sugar is all dissolved, then strain the mixture through a sieve. Bring the mixture to boil again.
3. Mix arrow root flour with 1 tablespoon of water, then add into the mixture 2) . Stir until the mixture become thicker, remove from the heat.
4. Add flavoring agents and coloring agents. For me, I devide the mixture into 2 parts : for the first part I add red coloring agent and vanilla extract, for another part, I add green coloring agent and peppermint flavouring agent.
5. Pour the mixture into a mold and let it cool down for about 1/2 -1 hr. Take them out from the mold and let the jellies exposed to the sun for 3-4 days or until the outer shell of jellie becomes hard. But for me, a person who live in a cold and dark country like Sweden, I just let them dry in the room. But it takes 8 day. And yes it's done!
Ps. I did experiment by using gelatin powder instead of agar-agar powder and the result turned out as a disaster. So I recommend not to use gelatin powder ;)
